Oven Fried Brussels Sprouts

Ingredients
- 2 pounds Brussels sprouts, stem and outer
- leaves removed
- cut in halves or quarters depending on size
- 1 Tbsp grapeseed oil
1 teaspoon curry powder (optional) - ½ teaspoon kosher salt
- Pinch ground black pepper
- 2 teaspoons extra virgin olive oil
- 1 Tbsp parsley, chopped fine
- 1 lemon, juice, and zest.
Method
- Trim off the ends of the Brussel sprouts and remove any brown or tough outer leaves. Cut them in half from stem to end. If any are very large, cut them into quarters from stem to end so that all the pieces are similar in size and cook evenly.
- Set your oven to Air Fry 425 degrees. Using a mixing bowl, drizzle the sprouts with the grapeseed oil and sprinkle with the salt and black pepper, add the curry powder if using. Toss to coat evenly, then add them to your air fry basket making sure to spread in an even layer.
- Place them on the middle rack with a catch pan on the rack below. Cook for approximately 18-20 minutes or until nicely browned and beginning to crisp. Remove them from the oven and using a mixing bowl toss them with the juice and zest from the lemon as well as the chopped parsley and extra virgin olive oil. Serve immediately.
